beta-fructofuranosidase from Bifidobacterium longum - complex with fructose

This is the crystal structure of beta-fructofuranosidase from Bifidobacterium longum in complex with fructose (hidden in a catalytic pocket). This and other related enzymes are used by gut bacteria to break down dietary fiber such as fructooligosaccharides (FOS) and inulin.
To make the stl:
- Downloaded the PDB file from https://www.rcsb.org/structure/3pij.
- Opened in PyMOL. Typed "show surface" and then "remove resn hoh" (to get rid of the plus signs). Exported as wrl.
- Opened in MeshLab. Exported as stl.
- Opened in MeshMixer. Used Analysis > Orientation to rotate the protein into a more print-friendly position.
