beta-fructofuranosidase from Bifidobacterium longum - complex with fructose

This is the crystal structure of beta-fructofuranosidase from Bifidobacterium longum in complex with fructose (hidden in a catalytic pocket). This and other related enzymes are used by gut bacteria to break down dietary fiber such as fructooligosaccharides (FOS) and inulin.

To make the stl:

  1. Downloaded the PDB file from https://www.rcsb.org/structure/3pij.
  2. Opened in PyMOL. Typed "show surface" and then "remove resn hoh" (to get rid of the plus signs). Exported as wrl.
  3. Opened in MeshLab. Exported as stl.
  4. Opened in MeshMixer. Used Analysis > Orientation to rotate the protein into a more print-friendly position.
